All About The Recipes

This weekend was pretty uneventful. Angela and I didn’t have much going on so we just kind of spent time in the house. She spent time cleaning up the kitchen and organizing a few rooms. I did some work on the lawn. I did do a little cooking this weekend. So, I wanted to share a few things that I did in the kitchen.




It’s been a while since I’ve made pizza. We used to have it every Friday night but we kind of just stopped eating it. Angela requested pizza for the weekend so I made it. As I said, it’s been awhile since I’ve made a pizza from scratch. I forgot really how to make it. My old go-to recipe uses sugar and olive oil as well as flour, yeast, salt and water. I wanted to skip the oil and sugar and just use the other basic ingredients. So, I used a pizza recipe from Bon Appetit. The dough was supposed to rise for 18 hours but I let it rise for about seven hours instead. The dough was still good. It was harder to work with because the dough could stay stretched. So I had a hard time working with the dough. Overall, the pizza came out great.


Curried Chickpeas with Spinach and Tomatoes:



I wanted to try something outside of my wheelhouse. I had a conversation with Dacia from My Roots To Grow a few weeks back about vegetables and being vegan. You can read about it on her blog. The conversation came about because I’m horrible about eating vegetables. I’m better than I was when I was 492 pounds. I’m still not the greatest vegetable eater. So, I wanted to make a dish that was vegetable centric, in a sense. I came across a recipe for curried chickpeas with spinach and tomatoes while perusing Pinterest. (Pinterest is a total productivity killer. Trust me!) So, I made it the recipe. I really liked it. I could have added just a little more salt. But overall, it turned out well. I admit. I did add some chicken and a sprinkle of cheese to my bowl as you can see in the picture down below. I’ve eaten this either way this week and it tastes good with or without chicken.



P.S.: I also made cod with chili pepper and cumin but forgot to take a picture of it. We’ve been eating that all week for our dinners and that was also great as well.

  • I am totally going to make that chickpea dish. It sounds amazing! Good for you for trying something new 🙂

    Also, I am super impressed by the homemade pizza dough. Whenever I try I end up getting so frustrated because I can’t ever stretch the dough out far/thin enough that I just make calzones instead. LOL!
