Recipe: Sweet Potato Shepard’s Pie

Shepard’s Pie is a dish that Angela has made before. The dish consists of various vegetables that are sauteed with meat, traditionally lamb, and is thicken with a sort of gravy. It is then placed in a baking dish evenly and mashed white potatoes are spread over the top of the mixture. In the past, I wasn’t a big fan of the dish. As simple of a dish, it’s easy to make it complicated with the addition of too many ingredients. After years of not having the dish, Angela made it again this week for our lunches. It was excellent and I really enjoyed it. Listed below is Angela’s version of Shepard’s Pie. She used roasted sweet potatoes that were mashed. Angela also has a seasoning recipe that she uses on meat that resembles the taste of sausage. I will post that recipe later this week. Try this recipe out and tell me or Angela what you think.

Sweet Potato Shepard's Pie

A traditional Irish dish with a twist! Typically referred to as a meat pie, this version uses sweet potatoes as the crust versus the traditional method using mashed white potatoes.
Ingredients
  • 2 cups Mashed sweet potato
  • 1 pound Ground Turkey, Beef or Chicken
  • Half of white onion, diced
  • ½ cup White Mushrooms, chopped
  • 1 and ½ cups, Frozen peas and carrots
  • 1 tsp Black Pepper
  • 1 tsp Oregano
  • Salt to taste
  • 1 tbsp Flour/Cornstarch
  • ½ cup Low Sodium Chicken Broth
  • ½ cup of shredded white cheese (optional)
Instructions
  1. Preheat oven to 425 degrees
  2. Add onions and mushrooms to a pan on medium heat
  3. Saute until onions become translucent, about 5 mins.
  4. Add in the meat with oregano, pepper and salt and cook on medium high heat.. Cook until browned, about 7-8 mins.
  5. Add chicken stock and cornstarch and cook for another 2 minutes.
  6. Add in the frozen veggies and cook just long enough to heat through, 1-2 minutes.
  7. Remove from heat.
  8. Using the sprayed baking dish, spread the meat mixture evenly in the pan.
  9. Top with mashed sweet potatoes in an even layer.
  10. Cover with foil and bake for 15 minutes.
  11. Remove from oven, uncover and top with cheese.
  12. Bake uncovered for 10 minutes or until cheese is melted.
  13. If not using cheese, bake uncovered for 10 additional minutes to crisp up the sweet potatoes.
  14. Remove from oven, let stand for 10 minutes and then cut and serve.
